Seitan made me do it!


Take cooking classes here!

Matt's family gave him a gift certificate and we've been waiting to finally take this Savory Homemade Seitan class. It was my first time taking a cooking class at this school so was pretty excited, there were about 12 students and the class was led by a wonderful chef, Myra Kornfeld, along with 5 or 6 cooking assistants.



I LOVE seitan. The recipe we used is different than most recipe variations I've seen in my cookbooks/other cooking blogs, so I'll be interested to see how this seitan differs from all the others. Essentially, the process involved kneading wheat flour, white flour, and water followed by soaking the dough in water for half an hour, followed by rinsing all the starch out, followed by boiling the remaining wheat gluten in a vegetable broth. Sooo, as you can see- it's a lengthy process!!

As a class we made a 4 course meal and sat down together and chowed down- I would like to take more classes here in the future (mostly to get all the tasty recipes). We made seitan-portobello mushroom sloppy joes, orange glazed seitan with watercress, seitan fajitas with spicy avocado sauce, and the grand finale- moussaka (look for this around thanksgiving, I will probably make it for my family) = )

a PERK about taking the class is that we got to take a pound of seitan EACH home! we were inspired the next day to incorporate our cooking knowledge with travel experience and just dining out. Homemade seitan + santa monica + san loco = deliciousness.

DO THIS AT HOME! it's so easy! Homemade guacamole - simply avocados, fresh ground salt, throw in a lime, and some chopped cilantro, and voila...
