Originally thinking of making another batch of oatmeal raisin cookies, I received this jug of maple syrup and wanted to try a new recipe to incorporate it into instead. Hmmmmm....perhaps a simple Oatmeal-Maple Bread? (Adapted recipe from The Enchanted Broccoli Forest Cookbook)

An adapted Oatmeal-Maple Bread with crumb topping lightly hinted with maple and ginger
This bread is very lightly sweetened (think corn bread or less sweet), perfect as a breakfast treat, dessert with tea, or a dinner side bread with some butter. Initially I had thoughts of jamming this bread with some ripe bananas and chocolate chips or carob and had to stop myself because the MAPLE SYRUP was supposed to be the star! (remember?) So I opted for a crumb topping which utilizes the maple again with some ground ginger which compliments it prrretty well.
For the bread you will need:
1-1/2 C rolled oats
2 C unbleached white flour
1/2 t baking soda
1-1/2 t baking powder
3/4 t salt
2 eggs
1/2 C real maple syrup **for a sweeter bread try to add up to 1 C maple syrup!
1 C yogurt
1 t vanilla extract
*1/2 t grated lemon rind
*2 T fresh lemon juice
*I didn't have lemons and replaced this with 1 T apple cider vinegar, so missed out on the real lemon flavor
2 T apple sauce
4 T melted butter
For the crumb topping you will need:
4 T butter
1/3 C sugar
1 T maple syrup
1/3 t cinnamon
a pinch of ground ginger
a pinch of salt
a pinch of all spice
3/4 C cake flour
1. Place the oats in a blender and grind to a coarse flour, set aside.
2. Sift together the dry ingredients for the bread, stir in the oats, and make a well in the center.
3. In a separate bowl, beat together all the wet ingredients. Pour this mixture into the dry well and combine well with a spatula.
4. Pour batter into a lightly buttered loaf pan.
5. Crumble the topping on the top of the loaf and bake at 350 for 50-60 minutes or until a knife inserted comes out clean. Cool in the pan for 10 minutes, cool for at least another 30 minutes before slicing or bread will crumble.
