
What better way to celebrate America's Independence Day then with a cake......a MEATLOAF cake that is!
I got this top notch idea from my friend, Jane, who years ago had made this cake, and I've since been thinking of an opportune time to make my cow friendly version. This is the Vegetarian Times recipe with the addition of BBQ sauce. We added 2T BBQ sauce into the mixture with the Ketchup, along with 2T or so on top before popping it into the oven. The mash potatoes came out a little lumpy, but was tasty nonetheless. Play around with different cake decorations! Matt made some lovely facon rosettes, we topped off the cake with a corn kernel border and ketchup inscription- DELICIOUS!
Meatloaf Ingredients
1/4C Walnuts, finely ground
2 Stalks Celery, finely chopped
1/2 Medium Onion, finely chopped
2 Cloves Garlic, smashed
(1) 10 oz pkg Extra Firm Tofu, drained
(1) 14 oz. pkg Soy Protein
1-1/4C Oats
3T Soy Sauce
2T Ketchup
2T BBQ
2t Italian seasoning or your favorite spice blend
Finely ground the walnuts in a food processor and set aside. Saute the celery, onion, and garlic for 4-5 minutes until tender, set aside to cool. Mash the tofu in a bowl, mix in the walnuts, sauted veggies, soy protein, oats, soy sauce, ketchup, BBQ, and seasoning. Heat the oven to 350 degrees. In two 9" round cake pans, either coat with veggie spray or light rub of olive oil and divide the meatloaf mixture into both pans. Spread ketchup and BBQ on top to coat both cakes and bake for 55-60 minutes until a toothpick is inserted and comes our clean.
Mashed Potatoes Ingredients
1-1/2lb. Potatoes, peeled and cut into chunks
2T Extra Virgin Olive Oil
2 cloves Garlic, smashed
1/4C soy milk
Cover the potatoes in water and boil for 20 minutes or until you can easily poke the potato with a knife, drain water. Add the olive oil, garlic, and soy milk and use a mixer to blend all the ingredients until smooth. Continue to add milk and olive oil to achieve desired consistency. You could also add in parmesan cheese.
Assemble the meatloaf cake as you would a regular cake, Happy 4th!

Never before have I had as much fun with food. That cake looked good I wanted to shake its hand but it didn't have any hands so I ate it instead. Good choice. Great eats. There is no question, I have the luckiest stomach in the world.
