
OK so this isn't exactly categorized as nutritious, but it is delicious! While I worked at a bakery several summers ago, they sold a delicious banana pudding which became one of my favorite all time treats. This version involves less time, ingredients and isn't exploding with sugar which allows the taste of the banana and nilla wafers to shine through.
Ingredients
2 boxes instant Vanilla Pudding (along with the ingredients to make puddin)
1 pint heavy whipping cream
1 t vanilla extract
1 box Nilla Wafer Cookies
2 ripe bananas, sliced
Prepare the vanilla pudding as instructed for pie fillings. Set in fridge. Meanwhile, in a large bowl whip the cream with an electric mixer. Start off on low speed so the cream doesn't splatter everywhere. You should begin to see a whipped cream volume form afer 3-4 minutes. Add the vanilla extract and combine into whipped cream. Fold this mixture into the pudding. In your serving container of choice, start with layering the nilla wafers, banana slices, and then pudding until mixture is gone. Store in fridge at least 2 hours, the longer the pudding is stored the softer the nilla cookies become. Enjoy!
serves 8-10 people
Note:
1. If you don't have an electric mixer you could use purchased whipped cream from the store and fold it into the pudding mixture too.

MMMM..i love banana pudding. there was a place on Bedford, formerly Sweet Farm, which had a badass 'nana pudding. BUT...they didn't have it every day...the pudding was just right, the whipped cream was very light and fresh and the wafers were sprinkled throughout.
